Correct Chocolate Tempering
The employment of cooling and heating of chocolate with the goal of using it for coating and dipping is named tempering.
A suitable use of tempering will give the dark chocolate a soft and silky look, a snappish approach and not melt simply in your hands. Correct tempering is supreme for molding candies, and guaranteeing that they are going to remove from molds easily and maintain a glossy appearance.
To gain perfect tempering, you can try these different techniques :
Take a pound of broken chocolate, melt 2 / three of it over an indirect heat, for example in the top pan of a double boiler. Continue melting up to the point that the chocolate is liquid and soft in appearance ( at 110-115F ), then add the third left of the damaged chocolate and heat again until the entire thing becomes smooth.
Transfer the chocolate onto a marble or laminate surface. Then scrape and stir the chocolate across the surface to cool it by using a spatula. When the chocolate cools to 80-82F, bring the chocolate back to the top pan of the double boiler, then place over hot though not boiling water.
Continue to heat and stir the chocolate until it reaches 87-91F, then the chocolate is ready to be employed in dipping, coating and molding candies.
Place 2 / three of desired quantity of chopped or rasped chocolate, in the top pan of a double boiler. Heat over hot but no boiling water, steadily stirring until the chocolate reaches 110-115F. On a towel, place the top pan of the double boiler then cool to 95-100F. Add in the remaining chocolate to the top pan, and stir it until it is totally liquified. It is now ready for dipping, coating and molding candies!
When tempering, don’t heat above 130F because chocolate is extraordinarily sensitive to heat and should be burned simply. Always ensure that no liquid gets into the chocolate because it will result to clumping or seizing.
