RECIPES FOR SUCCESS – PERFECT WOOD FIRED PIZZA
Pizzas from a wood fired gourmet pizza oven are totally different from those done in a traditional oven – they’ll have a delicious natural smoky flavour and plus they’ll take less time to cook.
You’ll be amazed at the simplicity of use of your wood fired pizza oven, and with all the delicious meals you can produce, you’ll be wondering why it took you so long to get one of your own!
Getting Started
Quality ingredients are the key to any good meal. Ensure you buy only the freshest, tastiest vegetables, chicken, meats etc.. Pizzas will taste better if they’re made from quality basics.
It’s also best to mix and knead your own dough – this only takes a few minutes, isn’t hard to do and will add extra special taste.
Experimenting with cheeses is also part of the fun. The most popular varieties are mozzarella and parmesan, fontina, gorgonzola, pecorino and provolone. But there are no rules, so have fun trying combinations of different cheeses and different varieties, such as goat’s cheese and brie.
A useful tip is to chop cheese into blocks rather than grating or shaving it. This stops it from burning, ensuring melted magic on the pizza topping.
Getting your wood fired pizza oven prepared
The fire should be started around one and a half hours before you want to start cooking the pizzas. In the beginning, the fire should be made in the centre of the oven floor and then gradually spread out to the edges of the oven (adding wood as needs be) so that the entire oven floor is heated up.
And now to make the perfect pizza
Once the interior temperature reaches between 350 to 400 degrees Celcius, the dome of the oven will turn either white or clear – and all the soot will have burnt away and disappeared. It’s now ready for cooking. Move the coals to one side of the oven and place your pizza in the centre of the floor. It should take around three minutes to cook your pizza to perfection. Remember to turn your pizza around after a minute so that both sides of the crust face the coals to achieve a crisp roasted edge.
