Drop some tomatoes, onions, avocadoes, and peppers into the food processor and 30 seconds later you have a delicious dish. You can also add ingredients like corn, black beans, or fruit. Fruit salsa is all the rage. Keep some canned pineapple or mango on hand to add to a quick salsa. They go very well with spicy peppers and tomatoes.
If you have some veggies on hand, you can make some wonderful easy appetizer recipes. Alternate slices of red tomatoes, mozzarella cheese, and basil leaves to make a delicious Italian salad. If you get a little warning that you need to feed a crowd, you can quickly brown some ground meat, add seasoning, and wrap them up in some fresh lettuce leaves. The seasonings you choose will determine the end results.
