You Will Need:
1/2 C. to One cup chocolate chips
3 courgettes, about six inches long, cut into shreds (roughly 2 cups)
One teaspoon ground cinnamon
2 1/2 C. flour
3 fresh eggs
1/2 C. butter
1 t. vanilla flavour
1/2 cup normal sugar
1 cup brown or demerara sugar
A half cup of oil
Half C. buttermilk
4 tbsp cocoa
One t. table salt
Two tsp baking soda
Heres What You Need To Do:
Whilst you are preparing the ingredients, preheat your oven to to 325 F / 160 C.
Lightly grease a 9″ x 13″ cake tin and place to the side.
In a large mixing bowl,combine sugars, butter and oil.
Break in the eggs, the vanilla and the buttermilk and give it a good mixing with a wooden spoon.
Using a sieve, sift the flour, cocoa, soda, cinnamon and salt together.
Add to the mixture.
Mix in the shredded courgettes and give it a few stirs.
Pour it all into the cake pan and spinkle the choccie chips over the top.
Put into the hot oven and bake for 45 mins.
Allow the cake to cool down a little, then turn out on wire rack.
