The necessary element to making great Cafe Mochas is to use high end ground chocolate just like the cafes use. While a good majority of big-name coffee shop chains (Star bucks, Secondcup, Timothys, Tim Hortons, McDonalds) might have their own proprietary powders, most small cafes will use a Ghiradelli chocolate powder for it’s high quality. - A good espresso brewer

Instructions:
Step 1: Make your 1-2 shots of espresso, depending on how strong you like it. You’ll want to use a coffee that has recently been roasted and ground to an espresso roast (within 2 to 3 days) – which is typically higher quality from a microroasted than one that’s been sitting on store shelves. Keep in mind that you will haev an additional kick of caffeine from the ground chocolate powder, so make sure not to overdo it on the espresso. Pour your espresso into a mug.
Step Two: Using the steaming wand on your espresso brewer, steam the milk in a frothing cup until it reaches 160 degrees F.
Step 3: Add 3 tbsp of the Ghiradelli chocolate powder (33g) to the cup with the espresso, and immediately pour the steamed milk in. Allow the steamed milk to flow quickly down the side of the mug while pouring so that it really mixes in the chocolate powder. The hotter the espresso and steamed milk are at this point, the better the Ghiradelli chocolate will mix – just don’t go over 160 degrees Fahrenheit.
Step 4: Let it cool down slightly to avoid scorching yourself (or your family’s), then jump in!
Optional: You may want to add a flavouring syrup for coffee to change the flavour. Some great flavours include creme de menthe, vanilla bean, sugar free amaretto and chocolate milano. These can usually be bought from the same coffee shops that sell the Ghirardelli as well (Starbucks has it’s own brand) – alternatively,or you can search for premium coffee syrups on the internet.
Optional: You can substitute the “Ghiradelli Sweet Ground Chocolate” for “Ghiradelli Ground White Chocolate Powder”.
Ghiradelli sweet ground chocolate isn’t just for Caffe Mochas however! It goes great as a topping on desserts (ice cream, pastries) as well.
