Pizza as a Comfort Food Through Out Time by Alfred Ardis
Comfort foods are making a comeback, with a few visible tweaks to make these old standbys healthier diet options. A good case and point is pizza. This delightful pie as we know it today came into existence in the nineteenth century as the perfect answer to fast food. Of course this all American favorite was around longer than this, originating, not in Italy as most people think but in Greece.
In Greece this comfort food delight was served as flat bread and topped with vegetables. Talk about making a healthy food choice. It wasn’t until the Greek pizza made its way to Italy in the 18th century that it took on its more familiar form of pie that we know today complete with mozzarella cheese and tomato sauce to resemble the Italian flag. Italian royalty loved the new dish so much it took off in popularity and hence a comfort food was born.
Today there are several different types of this classic pie including Chicago Style and New York Style. Chicago style as the name correctly implies originated in Chicago in 1943 and is known for its thick – up to three inches thick- crust. A University of Texas football player by the name of Ike Stewell is generally credited with being the inventor of this culinary delight although there is some dispute about this fact. Regardless of who invented the Chicago style pie one thing is certain- it is not your Italian pizza. This version is completely opposite of the Italian version with a much thicker base of dough and more sauce and cheese. The Chicago version is exactly what you would envision feeding a football team in fact which could explain how it came to be invented by a former football player.
The New York Style pie has been around since the 1900′s and aptly came from New York where even then the bustle of the city called for food to be eaten on the move. The New York style of pie obliges and is a thin foldable crust with just a cheese topping. This version is probably closer to the Italian version than any other version of this dish has been.
Clearly pizza is a part of our culture and has been shaped by our times and culture to fit what we needed it to be at the time. A classic comfort food it is in no danger of disappearing off the food radar screen anytime soon.
Even with modern day tweaks to make this dish healthier, it remains a top ten comfort dish available with wheat or traditional non wheat crust, that is New York thin, Chicago thick or somewhere in between and there is no limit on toppings, sauce types or even the kind of cheese you opt for.
A comfort food for a reason, this is a dish that will continue to stand the test of time and see the next generation into yet another century of changes, but that won’t include changing the pizza.
